Perfect as a pre-dinner tipple, give the classic Italian cocktail a festive feel with warming cinnamon, fragrant star anise and aromatic bay leaves.

INGREDIENTS

  1. 3 cinnamon sticks
  2. 4 whole cloves
  3. 2 star anise
  4. 200ml gin
  5. Ice
  6. 100-200ml vermouth
  7. 100-200ml Campari
  8. Orange slices and fresh bay leaves, to serve

YOU WILL NEED

  1. 4-8 glasses
  2. Frying pan
  3. Medium sized jar
  4. Fine mesh sieve

METHOD

  1. 1.
    Add the cinnamon, cloves and star anise to a dry frying pan and toast for 5 minutes, or until the spices are fragrant. Remove from the heat and leave to cool.
  2. 2.
    Tip all the spices into a jar and pour over the gin. Seal and chill for 48 hours to infuse.
  3. 3.
    Strain the infused gin through a fine mesh sieve.
  4. 4.
    Fill the glasses with ice.
  5. 5.
    Mix the cocktail by tipping 25ml of the infused gin, vermouth and Campari into the glasses.
  6. 6.
    Garnish with orange slices and bay leaves.
